Nothing wild or crazy here, just the perfect combo of hot, gluten free protein pancakes paired with my new favorite obsession – real coconut yogurt.
Now, I’m not talking about the pre-made stuff sold by Chobani. I’ve tried that in the past and although it’s pretty freaking awesome tasting, sadly, it’s loaded with 13 grams of sugar (whaa whaa).
Since I’m the queen of finding healthy alternatives to otherwise overly decadent foods, I have found the perfect solution and there’s no added sugar, baby! Just make sure you buy the unsweetened shredded coconut (very often the baking section of your grocery store will only sell the sweetened kind).
Now I’m suggesting this as a topping for your ProCakes protein pancakes or waffles, but really this is something I’ll have straight up any time of day for a creamy sweet protein boost to stave off hunger and cravings. Add a few fresh blueberries and it’s pure awesomeness in a bowl.
The recipe for the creamy coconut yogurt is about 95 cals, 10 g protein, 6 grams of fat and only 4 grams of sugar. When added to ProCakes, it’s about 300 calories total and 30 grams of protein (not including the blueberries).
Coconut Creamy Yogurt Recipe
- 1 tablespoon of unsweetened shredded coconut
- 1/4 teaspoon of vanilla extract
- 1 sachet of stevia
- 1/2 cup plain greek yogurt (I like Fage)
Mix well and spread over your protein pancake or just add to a small bowl of fresh blueberries.
