Skinny Protein Pancake Recipe (GF)

The other day I received a question from a customer. She wanted to know whether the nutritional information on our protein pancake mix reflected the final number once prepared or just the dry mix. So I directed her to the label where it mentions that the nutritional data is only for the dry mix, as there are a number of ways to prepare them that would vary the end caloric result.

So of course the next question was, what is the absolute lowest calorie preparation option for making ProCakes protein pancakes? I had to laugh as this was going through my mind when I was creating the formulation in the first place. Although I was also factoring in how few carbs I could have without sacrificing flavor, and how much protein I could pack in before it started to resemble a hockey puck instead of a protein pancake.

So I gave her this quick recipe for the lowest calorie preparation option that wouldn’t compromise flavor. Keep in mind that you could go one step further and use water instead of milk, but I find the end result is a little drier than you’d probably want.

So here it goes. Keep in mind that I still swear by using a whole egg instead of egg whites as healthy fats will keep your satiety levels higher and therefore keep you fuller longer. But if low cal is what you want, here you go!

Skinny Protein Pancakes Recipe

Ingredients

  • 1/2 cup ProCakes Protein Pancake Mix
  • 1/4 cup egg whites (free range, pasture raised is optimal)
  • 1/2 cup unsweetened, unflavored almond milk

Preparation
Just mix ingredients in a bowl and cook over medium heat until pancakes start to bubble, then flip and cook for about 1 to 2 more minutes.

Makes 3 pancakes.
