I’ve been experimenting with zucchini in baked goods for a while now. The moisture of the veggie, along with it’s mild, almost nonexistent flavor makes it an ideal green to hide in yummy treats to give them a little extra boost of fiber goodness, and of course, reduce the overall calorie density.
I love this recipe because it tastes so decedent without the guilt of eating a rich chocolate treat.
Being a lazy baker, I also love that I can just pop it in the toaster oven
- 1 zucchini, grated
- 1 egg
- 2/3 cup ProCakes mix
- 1/4 cup milk
- 2 tablespoons of xylitol (or sweetener of choice)
- 1/4 c cocoa
- Preheat oven or toaster oven to 400 degrees and grease a muffin or loaf tin.
- Mix ingredients in a bowl and add to baking dish.
- Bake for 25 mins.
