ProCakes Coconut Muscle Cookies

protein pancakes, protein cookies, coconut, gluten free, low carb, high proteinI was talking to a fellow Ms Bikini Universe competitor recently about the struggles of preparing for a show. If you’ve ever endured the process of dieting down for a fitness show, then you know what I’m talking about, but if you haven’t, here’s how it goes…

“Prep” as it’s called, is typically a 12 to 20 week process where you start out with the goal of gaining muscle and therefore eating lots of yummy protein and sometimes lots of carbs as you lift heavy weights and grow your muscles. That’s the fun part.

Then, as the show grows closer, it’s time to shed that layer of fat around your muscles so that you look sleek and lean on stage. The goal is to loose fat while retaining as much precious muscle as you can, so you end up eating a TON of protein, and very few fats and carbs.

By the time you get to the week before the show (known as “peak week”) you’re about ready to chew off your own arm you’re so hungry and depleted. That’s definitely NOT the fun part.

So my friend asked me how I push through the cravings for sweets and wine – two things that most competitors find really hard to give up. Well, I haven’t found a good way to endure the lack of wine, but I do know how to get around the cravings for sweets, and you don’t have to be a bikini competitor to want to know the secret to that!

The key is not to avoid sweets, but to make your own!  Aim for something that tastes sweet without adding sugar, but also keep the protein content high and the carb content moderate to low. Staying away from gluten is also really important as it tends to bloat the belly and promote water retention.

So it might look something like my coconut muscle cookies which are gluten free, made with no added sugars, but has lots of protein and very healthy fats that promote satiety and keep the crazy cravings for carbs under control.

I LOVE these. Since i’m not prepping for a show right now, I can make them a decent size. If I were in prep mode, I’d make smaller bite sized pieces and freeze them, thawing out just a couple a day so I can grab a tiny treat when a craving hits.

Now if I could only find a solution for the wine…..

ProCakes Coconut Protein Cookies

  • 1/2 c ProCakes mix
  • 1/4 c shredded coconut
  • 1/4 c egg whites
  • 1/4 c milk
  • 1 teaspoon stevia (about 3 sachets)
  • 1 T coconut oil

Directions

  1. Preheat toaster oven (or regular oven) to 400
  2. Mix wet ingredients in a bowl then add the dry ingredients.
  3. Mix all ingredients well and separate into 6 medium cookies or 12 bite-sized portions on a lightly greased, small baking sheet.
  4. Bake for 10 to 12 minutes or until firm to the touch.
